Facts about Terrace
The city of Terrace has taken the Kermode as its official symbol. The ghostly white “Spirit Bear,” actually a subspecies of black bear, haunts the rain forests of the north coast.
Friendly Faces
/ Cheryl and Sandy / Andrew writes: What can I say? They invited us into their home for not one, but two nights. We shared several meals together. We nursed a kitten to health together. We shared stories about one another, we shared laughter, and we shared dreams.
Today’s Highlights
Andrew writes: Running outside in the rain to rescue laundry with Amanda…Cooking in a real kitchen…Amanda writes: Doing laundry so that we don’t smell so bad anymore and have clean and dry clothes.
What happened…
Andrew writes: There isn’t a lot to write about today. As far as rest days go, we did our chores which includes drying out gear, doing laundry, re-organizing bags, and updating the blog. We had plans to do a bunch more things, but having access to high-speed internet meant that both Amanda and I were pretty couch potato-ee. Dirk and Miriam left after a delicious poached egg and toast breakfast. Naturally it was gorgeous and sunny all morning and most of the afternoon, right up until we decided to ride our bicycles into the city centre. Sandy loaned us his truck so that we were able to stay dry.
One of the errands we did get to do that I really enjoyed was meal planning, shopping and cooking dinner. I’m usually a strict meataterian, but decided to make everyone a beef stir-fry for dinner which included peppers, celery, onions, eggplant, garlic, carrots and coconut rice. Amanda was a big help as she cut up a lot of the veggies, and then did clean-up prior to serving. The two of us are like a well-oiled machine, and we really worked in harmony to pull this off. OMG! It turned out so good. I thought I would hate eggplant, but found it tolerable. I made enough for an army and was really happy that at the end of the night there were very little leftovers. Cheryl confided afterwards that no one ever cooks for her, so it was such a welcome treat for her to not have to do it. Really? I loved the feeling of creativity that flowed through me as everything was going into the wok. It left me brimming with energy.
After dinner we all sat in the living room chatting until late o’clock. I think we’re getting up early so that we can put the pedal to the metal.
